Food as Fuel
Potatoes are an important food and should be included in any diet for the necessary intake of carbohydrates. Recently diet fads have geared people away from carbohydrates, but in reality, carbohydrates are vital for proper nutrition as they are the primary fuel for the body.
Carbohydrates (also known as carbs) are stored in the body as glycogen. During high or low intensity activities the body relies on glycogen to be released and used by the muscles and brain for energy, therefore, the bosy must always have a "reserve" of carbohydrates for the body to use. If glycogen levels are low, the body is left without fuel and fatigue and irritability will set in. Healthy eating is all about balance - the balance of carbs, protein and fat with coupled with the intake of vitamins and minerals.
